    Baby spinach Sliced raw mushrooms Thinly sliced red onion Cooked bacon, crumbled Hard boiled eggs, sliced or chopped, according to preference Croutons for garnish, if desired Dressing 6 Tablespoons olive oil 3 Tablespoons red wine vinegar 1.5 Tablespoons honey 1 Tablespoon dijon mustard pepper to taste Combine dressing ingredients and mix well.     Smooth and Creamy Pureed Lentil Soup

    Ingredients 1 tbsp olive oil 1 onion chopped 5 medium carrots coarsely grated 150 g (3/4 cup) lentils 1 litre (5 1/2 cups) vegetable stock/broth 100 ml (1/4 cup) milk or dairy free milk 1 tsp ground cumin To serve (optional) Grated Paremesan Instructions Heat the oil in a large pot over a medium heat. Add the onion and cook for 3 minutes until softened. Stir in the carrots, lentils, stock, milk and cumin, then bring to a boil.     Ingredients 1 slice white bread (stale) 1/4 to 1/2 cup milk 3/4 pound ground beef 1/4 to 1/2 pound pork (lean ground) 1 small onion (finely chopped) 1 large egg (slightly beaten) Salt, to taste Pepper, to taste Directions In a large bowl, soak the bread in milk until soft.     Tumeric Rice

    Ingredients 2 tablespoons coconut oil 1⁄2 chopped onion 1 minced garlic clove 1 cup basmati rice 1 tablespoon turmeric 1 1⁄2 cups chicken broth 1 bay leaf 1 drop thyme salt and pepper Directions Melt 1 tbsp coconut oil in saucepan, add onion and garlic, cook until softened. Add rice and turmeric; stir to coat. Add remaining ingredients,bring to boil, cover and simmer 17 minutes. Stir in remaining butter, remove bay leaf, serve.

    Shrimp and Pasta Salad

    Ingredients 1-1/2 cups (375 mL) CATELLI® SMALL SHELL Pasta OR linguine 2 sliced stalks celery 1/2 lb (250 g) cooked salad shrimp 1/2 cup (125 mL) chopped red pepper 1/2 cup (125 mL) frozen peas, thawed and blanched 1/2 cup (125 mL) light mayonnaise 2 tbsp (30 mL) lemon juice 2 tbsp (30 mL) chopped fresh dill   Instructions 1 Cook small shells according to package directions. Drain and rinse in cold water to cool. 2 Combine shells with celery, shrimp, red pepper, peas, mayonnaise, lemon juice and dill. Season to taste with salt and pepper.
