    Italian Chicken Patties

Clean eating chicken patties.  There’s only so many days in a row you can eat chicken patties when you’re on a clean eating regime – unless you do something to mix it up a bit.  Adding some tomato sauce and Italian spices gives chicken patties an Italian twist. No official recipe – its all very simple:  In a bowl combine 1 pound of ground chicken or you can use ground turkey. Mix in some tomato sauce, but not so much that the meat becomes too soggy to work into patties.  As part of our clean eating program, we low carb it, so that means you can NOT add bread crumbs…

    Curry Chicken Patties

For our clean eating program.  Very simple – combine 1 pound of ground chicken or turkey, chopped onion, a few tablespoons of apple sauce (not so much that) it makes the meat too wet to form into patties). Curry powder to taste – a table spoon or two. Form into patties and cook in non-stick skillet (only if necessary, spray very lightly with coconut oil cooking spray).

  • Curried Chicken

    Easy, Skinny Curry Chicken

This curry chicken has more of a dry rub texture to it.  Because it doesn’t involve a sauce, it is very figure friendly, and super tasty.   If you are looking for a saucy curry chicken, see my Coconut Curry Chicken Recipe.  ([Photo Credit] 1 tbsp coconut oil 1 medium onions chopped 2 garlic cloves, minced 3/4 tsp grated fresh ginger (less than 1/4 tsp ground because tsp fresh grated = 1/4 tsp dry ground) 4 boneless, skinless chicken breasts 2 tbsp curry powder ( I use Jamaican Curry powder) juice from 1/2 a lemon (1 tbl) Handful of toasted almonds or cashews (0ptional) Cut chicken into small pieces (bite size or…

    Turkey Sloppy Joes

I was suddenly craving Sloppy Joes today. Back in the day, I would have thrown a can of Manwich in with some ground beef and called that dinner.  But now that we are into more of a clean eating lifestyle (except for cheat days!), I was thinking more like turkey or chicken sloppy joes, home made all the way.  Looked around at some sloppy joe recipes, but ultimately created my own hybrid based on 3 – 4 -different recipes, since none seemed quite spot-on for my liking.  Husband loved, loved, loved this. Went on about how good it was for 5 minutes after he got up from the table, no…

  • Cjicekn breasts stuffed with mushroom duxelles

Chicken Breasts Stuffed With a Mushroom Duxelles

Haven’t made this recipe yet, but intend to try it soon. It looks exquisite.  Like something you’d find on the menu of an elegant five start restaurant. Found this in an online forum on Gardenweb. I would also be inclined to try a variation on this, by using boneless skinless chicken breasts, and encasing it in a puff pastry – keep every thing else the same, including the sauce. “This flavorful and elegant chicken is stuffed with a combination of fresh and dried mushrooms. Because the breasts are stuffed under the skin, the stuffing moistens the chicken meat and keeps it juicy. use either dried porcini or dried Chinese mushrooms;…
