Greek Meatballs (Chicken)


Greek Meatballs with Optional Tomato SauceMade this around April 23, 2014. Very nice flavor. Husband gave it the thumbs up. Good addition to our weight management recipes. Didn’t make the sauce. From my old cookbook from the 80s (ah, the 80s….) “Microwaving Poultry and Seafood”, published 1986

1 lb ground turkey

1/4 chopped onion

1 egg, beaten (or equivalent egg whites)

2 tbsp oats or oat flour

2 tbsp fresh parsley (or equivalent dried)

1 tsp chopped jar garlic

1tsp dried oregano

1/4 tsp cinnamon

1/4  tsp allspice (I omitted)

Combined all ingredients, mix well. Form into balls. Bake in oven til cooked or fry in coconut oil, using as little oil as possible. Altertnatively, microwave at 70% for 8 – 13 minutes or til firm and cooked through, stirring after every 4 minutes. Can be made with the optional tomato sauce below. If using sauce and using microwave method, cook balls with sauce.

Optional Tomato Sauce

8 oz tomato puree or tomato sauce

1 tbsp fresh parsley

1/2 tsp diet brown sugar

dash pepper
