Linda’s Turkey Meatballs in Sherry Sauce

Meatballs”
1 lb of ground turkey or chicken
Handful of oats
Chia seeds
2 tsp egg white
Pepper to taste
¼ tsp oregano
Sauce: ½ sherry, ½ c chicken broth (up to ¾ c but I used ½ c).; 2 tsp diet brown sugar, heaping teaspoon garlic from jar, 2 Tbsp dried parsley flakes, 2 tblsp arrow root powder for thickening (mix with small amount water first), 1 large mushroom, sliced and then chopped.
Directions: Mix together all meatball ingredients. Brown meatballs in coconut oil, least amount possible – just lightly grease the pan. When browned, remove meatballs from pan. Combine all sauce ingredients and mix well. Pour into the same pan the meatballs were cooked in. Add meatballs back to pan, toss and simmer in sauce on low for a few minutes before serving. Serve with brown rice or cooked hulled barley.
