Like Moxie’s white chocolate brownie (via the Winnipeg Free Press)
250 ml (1 cup) real butter
340 g (12 oz) good quality white chocolate, chopped
750 ml (3 cups) flour
500 ml (2 cups) white sugar
5 ml (1 tsp) salt
60 ml (1/4 cup) half and half cream
125 ml (1/2 cup) dark chocolate (chopped pieces or chips)
Preheat oven to 190 C (375 F). Grease a 9 x13-inch pan. Use a double boiler to slowly melt together butter and white chocolate. In large bowl of electric mixer, stir together flour, sugar, and salt. With mixer at low speed, beat in white chocolate and butter mixture, then eggs and cream. Beat until just blended. Fold in dark chocolate. Pour into pan. Bake 20 minutes. Reduce oven to 160 C (325 F) and bake about 12 minutes more until lightly browned and set in center.
Let cool in pan on a rack about 30 minutes. Turn out onto cutting board, cool completely. Trim off brown edges and cut remainder in 12 pieces. To serve, cut each brownie diagonally and arrange on a plate. Top with vanilla ice cream, whipped cream (and/or white chocolate sauce), dark chocolate sauce and a bit of caramel sauce for colour.
White chocolate sauce
170 g (6 oz) white chocolate
22 ml (1 1/2 tbsp) real butter
60 ml (1/4 cup) half and half cream
Melt chocolate with butter and half and half cream on low power in microwave, stir until smooth.
Taste Tester Notes: A rich, decadent and good dessert. I used Callebaut white chocolate chunks, available in bulk. The batter will be fairly thick and you can use a spatula to spread it out evenly. Check while baking that the brownie does not get too brown (I turned my oven down to 350 F part way through the first baking as mine was browning quickly). It’s OK to let this cool in the pan, too. Cut into desired serving size pieces and arrange artistically with the toppings if you like. I served this with homemade vanilla ice cream, whipped cream and warm chocolate sauce. The white chocolate sauce is especially rich, and is for white chocolate lovers.
Moxies White Chocolate Brownie Recipe – #2
This picture would be spot on like Moxie’s White Chocolate Brownie if it had been drizzled in chocolate sauce and if it included some whipping cream… but it still looks very yummy.
- 4 oz (4 squares) white baking chocolate, chopped
- ⅔ to ¾ cup sugar (we find ⅔ cup is still fairly sweet)
- ½ cup butter
- 2 eggs
- 1½ tsp vanilla
- 1 cup flour
- ¾ cup semi-sweet chocolate chips
- Preheat oven to 350°F.
- In a large microwaveable glass bowl, combine white chocolate pieces, sugar and butter. Heat in microwave 1 to 1½ minutes, stirring occasionally, or until melted and smooth when stirred.
- With a whisk or a fork, beat in eggs and vanilla until well blended.
- Add flour, baking powder and salt. Stir until mixed.
- Allow to cool to lukewarm. This is very important, otherwise the chocolate chips will melt and distort the recipe (it’ll still be good, but not like Moxie’s where the chips are distinctly present in the brownie.
- Stir in chocolate chips.
- Spread evenly in a greased 8 inch square pan.
- Bake 30-35 minutes in preheated oven, or until golden brown and toothpick inserted come out clean.Note: Another technique to prevent the chocolate chips from melting and blending into the batter is to sprinkle the chocolate chips at the bottom of the pan before pouring in the cake batter (which you should still allow to cool). This ensures that the dark chocolate is at the bottom of the brownie, just like the authentic Moxies White Chocolate Brownie from Moxies.
Moxies White Chocolate Brownie Recipe – #3
This recipe is nothing special on its own – but when you serve it hot, and topped with a scoop of vanilla ice cream drizzled with warm chocolate syrup, the taste experience is a LOT like the Moxie’s White Chocolate Brownie recipe.
8 ounces chopped white chocolate
1 tablespoon vanilla extract
1⁄2 cup butter, softened
1 1⁄4 cups flour
3⁄4 teaspoon salt
1⁄3 cup white sugar
1 cup semi-sweet chocolate chips
Preheat oven to 350. Grease a 9×9″ pan.
Melt white chocolate and butter in the top of a double boiler, or in microwave on med power. Set aside to cool.
In a large bowl, beat eggs until foamy.
Gradually add the sugar and vanilla, mixing constantly.
Drizzle in the melted white chocolate mixture.
Combine the flour and salt and fold into the white chocolate mixture.
Fold in chocolate chips.
Spread the batter into the prepared pan.
Bake for 30 minutes or until a toothpick comes out clean. Do not over-bake.
4. Serve heated. Top with a scoop of vanilla ice cream, some real whipped cream and a drizzle of chocolate sauce.
