Really, really good – just made these, in fact, the 2nd batch is still in the oven. We call these Oatmeal Applesauce Cookies, “Oatmeal Applesauce Pucks” because any health cookie I make for my husband to snack on is called a “puck” round here. Anyway, just tasted these, hot out of the oven, and they were dang good. Husband had another way of putting it… Quote: “Mmmm, mmmm, mmmm, that %@#$ing good!”
1 cup applesauce
1 cup splenda brown sugar (diet brown sugar)
1/2 cup butter or coconut oil, softened
2 cups oat flour
1 cup quick oats
1 scoop plain or vanilla whey protein powder
1 teaspoon baking soda (I eliminated and they turned out awesome)
1 teaspoon cinnamon (I forgot to put in, and they turned out awesome)
1/2 teaspoon nutmeg (I forgot to put in, and they turned out awesome)
1/2 teaspoon cloves (I forgot to put in, and they turned out awesome)
1 cup chocolate chips (optional) I used raisins and – yup, they turned out awesome!
Preheat oven to 375 degrees. Mix together applesauce, diet brown sugar, coconut oil or butter, and egg. Add remaining ingredients (except raisins/ chocolate chips) and stir until combined. Dough should be firm (add more flour if needed). Fold in raisins or chocolate chips and scoop heaping tablespoonfuls onto a greased cookie sheet. Bake for 13-15 minutes (until golden).
Makes about 3 dozen.
