Homemade Mexi-Rice

Far better than packaged seasoning! Mexican rice with a mild flavor and none of the high salt, additives and MSG that you get in the packaged seasoning blends. Simple and easy to make. I use wholegrain brown Minute Rice since I try to avoid white rice which is not healthy. With all the flavor in the Mexican seasoning, you can’t tell the difference and the color doesn’t look any different from typical Mexi-rice, again due to the seasoning.

Ingredients

2 cups of instant rice (brown)
1 tablespoon cumin
1/2 – 3/4 tablespoon chili powder
salsa sauce

Cook the rice. Towards end of cooking time stir in cumin and chili powder (before rice is entirely firm). Once rice is cooked, stir in salsa sauce to taste. You’re shooting for aprox. 1/2 c to 1 c salsa.
