Diced Chicken With Vegetables and Almonds

Memories of Cathay House. Note, I dont add cooked chicken to the simmering vegetables until close to the end, otherwise the meat gets dry and rubbery. This is a version of what is called chicken ding in chinese cooking. Just found that out in feb 2022 when looking to perfect my replica of the cathay house recipe. 2 tsp peanut oil or sesame oil 2 cloves garlic, minced (or 2 tsp chopped garlic from jar) 1 pound raw boneless skinless chicken breasts, cut into 1-inch cubes 1/4 tsp black pepper 1/4 tsp ground ginger 1 1/2 cup fat-free reduced sodium chicken broth, divided 1.5 Tbsp low sodium soy sauce 2…

    Homemade Mexi-Rice

Far better than packaged seasoning! Mexican rice with a mild flavor and none of the high salt, additives and MSG that you get in the packaged seasoning blends. Simple and easy to make. I use wholegrain brown Minute Rice since I try to avoid white rice which is not healthy. With all the flavor in the Mexican seasoning, you can’t tell the difference and the color doesn’t look any different from typical Mexi-rice, again due to the seasoning. Ingredients 2 cups of instant rice (brown)1 tablespoon cumin1/2 – 3/4 tablespoon chili powdersalsa sauce Cook the rice. Towards end of cooking time stir in cumin and chili powder (before rice is…

    Teriyaki Steak Marinade Recipe

Made this today – finally, a teriyaki steak recipe that hits the mark. I created a hybrid recipe from 2 recipes I found that I felt would give me the result I wanted, and BINGO. Success! Its been a long quest for the perfect Teriyaki Steak recipe – the search was inspired by my very fond memories of the Beachcomber restaraunt – what an amazing Teriyaki steak they made! Also the Keg used to make an amazing teriyaki burger with the perfect teriyaki marinade – flavorful, not sticky, not thick. This is what I have been searching for based on those memories, and this is as close as I may…

    Curried Beef

I had some beef stewing meat sitting in the freezer that I needed to use up, and wanted to try something new instead of my regular beef stew recipes. Something was calling out, “Curried Beef”, so I went with it. Didn’t have a curried beef recipe in my collection. So I set out to find one. Oddly, this was not as quick and easy to do as I’d expected.Didn’t want anything too elaborate, just a fairly basic but full of flavor Beef Curry recipe. I whittled it down to a few that looked good and picked one. Then I found myself modifying and improvising along the way due to differences…

    Apple OR Banana Oat-Loaf

I wanted to start making healthy whole grain loafs for my husband to get his carb fix. Right now life is super hectic and believe it or, making muffins is just a lot of work (filling each individual cup… the extra work in cleaning a muffin tin with all those individual compartments, as opposed to a loaf pan). That these are considerations for me may sound crazy to those of you with time on your hands, but my life is crazy, through no choice of my own. This is a healthy loaf recipe, rich in unrefined whole grains. In addition to the oats, the flour is oat flour, which is…
