    Shrimp and Pasta Salad

    Ingredients 1-1/2 cups (375 mL) CATELLI® SMALL SHELL Pasta OR linguine 2 sliced stalks celery 1/2 lb (250 g) cooked salad shrimp 1/2 cup (125 mL) chopped red pepper 1/2 cup (125 mL) frozen peas, thawed and blanched 1/2 cup (125 mL) light mayonnaise 2 tbsp (30 mL) lemon juice 2 tbsp (30 mL) chopped fresh dill   Instructions 1 Cook small shells according to package directions. Drain and rinse in cold water to cool. 2 Combine shells with celery, shrimp, red pepper, peas, mayonnaise, lemon juice and dill. Season to taste with salt and pepper.

    CHICKEN SALAD Ingredients: chicken breast, chopped or cut into chunks 1 – 20 oz. can sliced water chestnuts 2 cups sliced celery 1 cups slivered almonds (toasted) handful or 2 of raisins and/ OR 1 twenty oz can of either mandarin orange pieces or pineapple chunks, drained 3 cups mayonnaise 1/2 tbsp.     There are a few tricks to a really good roast.  First, start with the best cut of beef you can get.     For really delicious sauteed mushrooms, here’s a simple recipe. What makes these mushrooms so extraordinarily flavorful is one secret ingredient – the lemon juice.
