Rubbed Beef Roast in Apple Juice Gravy

I love my regular pot roast recipe, but was getting tired of always having the tomato sauce componant in it, so I got the inspiration to season it with a rub I came across in another recipe I recently added to my collection, and then just add a bit of apple juice to the slow cooker to give a little bit of extra flavor and a base for the gravy. It turned out really good. I just need to remember to try to stick with Sterling Silver roasts for Safeway or Sobey’s because they are the best quality of meat – just watch for sales which the run every couple weeks. Beleive it or not, the rub comes from an Asian Honey Garlic Beef recipe (actually, come to think of it, technically its a pork recipe, but I also made it as beef, and it was even better). I adopted recently, which was super yummy (one of my new favorites!) and includes a sauce – but the rub itself which is used to season the meat is so versaltile!

Here’s the Rub: 🙂

Pork/ Beef/ Chicken Rub:

    â–¢ 1/2 tsp garlic powder
    â–¢ 1/2 tsp paprika
    â–¢ 1/4 tsp sea salt
    â–¢ 1/2 tsp black pepper

Combine the rub ingredients and rub onto all sides of the roast. I actually ended up making a little more, because I didnt have quite enough to rub the whole roast and wanted to make sure it had good flavor. Then sear the roast to brown on all sides in olive oil. Place in slow cooker along with potatos, lots of onion, some chopped garlic (or not since there is garlic powder in the rub), and desired vegetables (I simply did potatoes with onion and I think I added some kale on top toward the end but I dont remember for sure if I did that, possibly not). The add a splash of apple juice to the bottom of the slow cooker and cook low and slow until done. Toss the potatoes in the juice a few times along the way so they become infused with juice and flavour.
