    Oatmeal Peanut Butter Snack Pucks

    2 cups quick oats (not whole oats) 1 teaspoon ground cinnamon 1 cup peanut butter or almond butter 1/4 cup pure honey 1/4 cup apple butter or apple sauce 1 large banana, mashed (about 1/2 cup) Or 1/2 cup apple sauce Optional: 1/2 cup dried cranberries 1/2 cup shelled pumpkin seeds 1/2 cup raisins 1/4 cup ground flaxseed or chia seeds Or any combination of above Directions: Preheat oven to 325F degrees. Line large cookie sheet with parchment paper or a silicone baking mat. Combine all of the ingredients into a large bowl. Mix until all of the ingredients are combined.     Pumpkin Pucks

    This is a gluten free pumpkin cookie recipe (breakfast cookies). Chris and I call these kinds of healthy snack cookies “pucks” 🙂 Ingredients: Makes 10-12 large cookies 1/4 cup canned pumpkin puree 1/2 cup almond butter (or organic peanut butter) 1/2 cup honey 1tsp vanilla or almond extract 1cup almond meal/flour or oat flour (grind oats into flour in blender) 1 tsp ground cinnamon 1/4 tsp baking soda (use home made baking soda to avoid aluminum!) 1  cup raisins (or any cran-raisins or dried blueberries) Note: Alternatively you could use 1/2 raisins and 1/2 c nuts.
