    Ginger-beef stew Toss 1 kg cubed stewing beef with 1/3 cup flour. Brown beef in batches in 2 tbsp canola oil in a large pot over medium-high, 3 to 4 min. Transfer beef to a large plate and set aside. Add 2-1/2 cups no-salt beef broth, 2 carrots, sliced into rounds, and 2 celery stalks, chopped, to pot. Using a wooden spoon, scrape up and stir in brown bits. Add 227-g pkg sliced button mushrooms, 1 pouch onion soup mix, 2 tbsp grated ginger and 2 minced garlic cloves. Return beef to pot.     These were good, and I liked the idea of including them in my collection of healthy snack recipes for variety. But they turned out super-soft. As in, fall apart when you try to cut them soft. And they had fully cooled. I think if I try these again I will add an extra 10 minutes to the baking time. Also, I am leaving them out on an uncovered platter right now.     Made this a couple nights ago. Wasn’t sure about the addition of Dijon mustard to Shrimp Scampi, but gave it a go because you don’t know until you try. I’m not a big Dijon fan, but I’ve learned to be open to it. In certain instances I can actually enjoy the flavor enhancement it provides. In other instances, I don’t dig it. Anyway, the Dijon caused the sauce to turn out a lot thicker than in my old standard version of shrimp scampi. So when what we want is something really lite, best to go with that.     Oatmeal Peanut Butter Snack Pucks

    2 cups quick oats (not whole oats) 1 teaspoon ground cinnamon 1 cup peanut butter or almond butter 1/4 cup pure honey 1/4 cup apple butter or apple sauce 1 large banana, mashed (about 1/2 cup) Or 1/2 cup apple sauce Optional: 1/2 cup dried cranberries 1/2 cup shelled pumpkin seeds 1/2 cup raisins 1/4 cup ground flaxseed or chia seeds Or any combination of above Directions: Preheat oven to 325F degrees. Line large cookie sheet with parchment paper or a silicone baking mat. Combine all of the ingredients into a large bowl. Mix until all of the ingredients are combined.     This is a gluten free pumpkin cookie recipe (breakfast cookies). Chris and I call these kinds of healthy snack cookies “pucks” 🙂 Ingredients: Makes 10-12 large cookies 1/4 cup canned pumpkin puree 1/2 cup almond butter (or organic peanut butter) 1/2 cup honey 1tsp vanilla or almond extract 1cup almond meal/flour or oat flour (grind oats into flour in blender) 1 tsp ground cinnamon 1/4 tsp baking soda (use home made baking soda to avoid aluminum!) 1  cup raisins (or any cran-raisins or dried blueberries) Note: Alternatively you could use 1/2 raisins and 1/2 c nuts.
