My recipe from the ’90s at Martin Ave.

Chinese Chicken Fried Rice@

Save a bundle over ordering in Chinese food or picking up take out when you partake in the fun of making this well known dish yourself!  Four servings will cost only about $6.00!  Compare that to your favorite Chinese food restaurant! 

1    tbsp. olive oil

3    skinless, boneless chicken breasts

2    carrots, finely chopped

2    stalks celery, finely chopped

2    cloves garlic, finely chopped

3    cups cooked rice

4    green onions, finely chopped

1/3  cup orange juice

3    tbsp. light Soy sauce

1    tbsp. liquid honey

Rinse chicken and blot dry with paper towel.  Dip chicken into flour to coat.  Heat oil over medium-high heat in a wok or skillet.  Cook chicken until browned on the outside and no longer pink on the inside, about 10 minutes.  Remove from skillet.  Add carrots, celery, garlic and pepper (according to taste) to chicken juices in skillet and saute for 3 minutes, stirring continuously.  If necessary, add a little more oil.  Stir in rice, breaking up lumps.  Add chicken, green onions, orange juice, Soy sauce, and honey.  Cook, stirring continuously, until all liquid is absorbed, aproximately 3 minutes.  Serves 4.
